Pan Seared Scallops

Ingredients:
- 1 lb. bay scallops
- sea salt
- 1 tbsp. unsalted butter
- 1 tsp. olive oil
1. Rinse the scallops in cold water and pat dry.
2. Season both sides of the scallops with salt.
4. Add olive oil and butter to a pan over medium-high heat. Wait until the pan just begins to smoke.
5. Add the scallops to the pan and cook for 2 minutes per side. Use tongs to flip the scallops over. There should be some slight resistance when you flip the scallop over and each side should be a caramelized-brown color.
A scallop is cooked through when its still squishy to the touch. If its firm, you've overcooked it.
