Chipotle Chicken Burritos


Last week the idea of chipotle chicken burritos popped into my head. I started searching for recipes online but couldn't find any that sounded good. So I decided to create my own.

Chipotle Chicken Burritos

Servings: 6 burritos

    • 2 chicken breasts, cut into chunks
    • 1 small onion, diced
    • 1 can diced tomatoes in the juice
    • 1/2 tsp. brown sugar
    • 2 chipotle peppers in adobo sauce
    • 1 tbs. adobo sauce
    • 6 large tortilla shells
    • 1 can kidney beans, drained
    • 1 bag boil-in-the-bag brown rice
    • 1 1/2 cups taco cheese
    • 1/2 cup chicken stock 
    • sour cream
    • garlic powder, salt, pepper
    • olive oil 

1. Season the chicken breasts with garlic, salt and pepper. Add the chicken stock and chicken to a medium skillet over medium high heat. Cook until the chicken is no longer pink and the chicken stock has evaporated. Remove from the skillet and onto a plate. Shred the chicken.   
2. Add 1 tbs. olive oil, the onions and brown sugar to the skillet. Cook for 3-5 minutes or until the onions have caramelized. Add in the diced tomatoes in their juices, the chipotle pepper and the adobo sauce. Cook for 1-2 minutes.
3. In a medium saucepan, add water and cook the boil-in-a-bag rice according to directions.
4. In a small saucepan, drain the kidney beans and heat over low heat.
5. Pour the chipotle mixture into a blender and blend until smooth. Return to the skillet, adding the chicken. Stir to combine.
6. Once the beans are heated and the rice has been drained, add to the skillet. Stir to combine.
7. Serve on burrito tortilla shells with taco cheese and sour cream.
8. Enjoy!

* Note - if you aren't going to combine the rice and beans (or use them) in this recipe, use one chipotle pepper and 1/2 tbs. adobo sauce. 

Birthday Invitations


Last week my friend Shannon asked me if I could help her find invitations for her daughter's 6th birthday. She had looked at the wedding invitations I made and thought I did pretty well on them. I said sure and started searching online to see what all was available.

I found a really cute invite on but they wanted $15 for just the graphic. That didn't count having it printed, adhered to cardstock so it wouldn't be flimsy or the envelopes. There was just no way I was going to spend that kind of money for a birthday invitation.

So I decided I would create my own. If I could manage to make wedding invitations just using word, I could surely make birthday invitations. I went to a craft store during my lunch break and picked up stickers of flip flops and balloons (its a pool party). I was going to buy the packs of 4x6 cardstock with envelopes, but $6 per pack of 10 was just kind of crazy. I came home and did some research online realizing that I could easily use 4x6 blank index cards.

Earlier today I went to Walmart and found the blank index cards and then a pack of invitation envelopes. I wanted colored envelopes, but the invites needed to be mailed next week so I knew I wouldn't be able to get them online. I messed around in Word for about 15 minutes and this is what I created.

The first part says "Join us as we celebrate MyKenzie's 6th birthday". The index cards ended up being too flimsy on their own. I knew that after I made menu's for the wedding that I would have leftover cardstock, so I used 7 pieces of the purple cardstock to back these.

Weekly Meal Breakdown #9


I already know that this week is not going to be a cheap week meal-wise because I'm making Maryland crab soup. Crab meat is typically pretty expensive unless you can get it on sale. Unfortunately, no crab meat was on sale at any of our 3 local grocery stores that I thought was decent enough to put in soup. I'll typically use claw meat for soup but not one store had any in stock. So my options were imitation or lump. Maryland natives will not use imitation so my only choice was a $20 pound of lump crab meat. It does make me feel a bit better to know that this makes so much soup that it can definitely be more than one dinner.

Anyway, onto the meals for the week.

The total for this week comes to $57.89. The crab soup and dirty rice makes extras that I can take for lunches so that cuts into the price a bit. I can not WAIT for the crab soup! I want to make it now!

The International Aisle


Have I ever told you about my love for the international aisle in grocery stores? It doesn't matter what grocery store it is or even what state it is in, I have a serious infatuation with the international aisle. I believe it stems from the fact that my mother made very basic, boring and plain meals for my entire childhood and I had no idea that the nifty ingredients in the international aisle even existed. I was also pretty ignorant of spices.

When I was a kid, our spice cabinet included the following items:
  • salt
  • pepper
  • garlic powder
  • oregano
  • parsley
  • bay leaves
  • paprika
  • cinnamon
  • meat tenderizer
  • onion powder
  • chicken and beef bouillon cubes
  • vanilla extract
  • powdered cocoa
  • baking soda
  • baking powder
No, seriously. That was all. I remember going to the grocery store with my dad and he picked up Salad Supreme and those Montreal seasonings. I had no idea what they were or what they could possibly taste like. My mom refused to use either of them for a while because they were new and different. Yeah...

When Tom and I got our first apartment, we went to Bed, Bath and Beyond and purchased a $40 spice rack under the influence of his mom and brother. They both had one so it was like a family spice rack. Honestly, I'm still not 100% sure of what to do with all of the spices in there. Fennel, corriander seeds, ginger (I dislike it), celery seed, marjoram, sage, etc.

But anway, enough about spices and back to the international aisle. The first time I realized just how cool that aisle was in Giant one day. It was at the end of the aisle with chicken stock and since that is a staple in my pantry, it was not surprising I was in that aisle. Something caught my eye and I started browsing. Fruit flavored soda, fish in tins, chipotles in adobo, green chilies, diced jalapenos, miso soup in a packet, nori, wasabi paste, soba noodles, the list could on and on.

I had an overwhelming desire to buy everything. Every marinade, paste, noodle, canned good and soda. I wanted them all. I have no idea what I would have done with most of them but that is just not the point. There were all of the new, exciting and fun things in the international aisle and I wanted to play with them!

Every day I thank the food gods for my experimental side that likes to try out new recipes and play with ingredients that I've never heard of and sometimes can't pronounce. And just because I don't think I've shocked you enough, I want to share with you the very basic, boring and plain foods that I spent my childhood eating.

Breakfasts: plain pancakes, french toast (no cinnamon), bacon, eggs, toast, cereal, bagels with plain cream cheese only, occasional donuts, and if we were really lucky - cinnamon raisin bread.
Breads - white sandwich bread only. Occasional potato rolls or hot dog rolls.
Vegetables - iceberg lettuce, carrots, tomato, onion, corn on the cob, canned green beans and corn, green pepper (but only for sloppy joes), celery
Fruits - strawberries, bananas, oranges, apples, and the oddball - kiwi
Cheese - American or provolone. Cheddar, ricotta, brie? Hell no, not in this house.
Meats - bacon, ham for Christmas and Easter, steak, chicken breasts, beef cubes, ground beef, pork chops
Starches - plain boil-in-the-bag white rice, baked potato, mashed potatoes, french fries
Seafood - steamed crabs and shrimp (hey we are from MD after all), and when I was 16, we introduced tilapia because I found out I liked it.

That's really it. No red pepper, jalapenos, mushrooms, scallops, risotto, blueberry pancakes, fish, raspberries, asparagus, spinach, nothing. No tacos, stir frys, casseroles, nothing. Lasagna was a rare occasion and only if my dad made it.

Pathetic, huh? Don't worry, I wonder how I survived and came to love scallops, mushrooms, spices, sushi, and just about everything else too.

Redner's Savings: Chicken Breasts


I mentioned the other day that my grocery store is having daily deals on meats and other items for about a month. Today was the boneless, skinless chicken breasts for $1.69 per pound. I stopped in today and found out there was a limit of 3. Either way, I purchased 3 packs of 3 breasts each for get this...$8.33! And one breast in each package appears to be large enough to cut in half, making that 4 meals for $8.33.
I can't wait to get home and see how much room there is in the freezer to see if I should stop back tomorrow for $1.88 ground beef and on Friday for shrimp!

Chicken with Creamy Orzo


I found this recipe on Annie's Eats and thought it would be a fun one to try out. I've never had or made orzo before and I'm always trying to find ways to get rid of the canned goods in my pantry. I had to adapt the recipe a bit because I knew we didn't have the spices and for some reason the grocery store is always out of heavy cream when I need it for a recipe.

Chicken with Creamy Orzo

Servings: 3-4

    • 1/3 box orzo
    • 3 chicken breasts
    • 2 tbs. olive oil
    • 1/4 tsp. garlic
    • 1/2 tsp. Italian Seasoning
    • 2 medium slices red onion, diced
    • 2 tsp. minced garlic
    • 1 can diced tomatoes
    • 2 small heads of broccoli, chopped
    • 1/2 cup light cream
    • 1/2 cup Parmesan cheese
    • salt and pepper
1. Bring a medium sized pot of salted water to a boil. Add orzo and cook according to directions. Drain the water, reserving 1/4 cup.
2. Add the oil to a large skillet. Season the chicken breasts on both sides with garlic, Italian Seasoning, salt and pepper. Depending on the thickness of the breasts, cook on each side until golden brown, approximately 6 minutes per side.
3. Add the onion and garlic to the chicken and cook for 1-2 minutes more. Add the diced tomatoes and broccoli. Cover and cook for 8-10 minutes or until broccoli is still a bit crisp.
4. Add the orzo, light cream and Parmesan cheese to the chicken mixture and still until the cheese is melted and everything is blended. If the sauce is too thick, add some of the reserved pasta water to thin it out.

I thought this recipe was pretty good but felt like it was missing something. Maybe its because I didn't have the spices from the original recipe or maybe more of the ones I used needed to be added because once everything is cooking with the chicken it tends to pull the seasoning off of it. Either way, its something that I will make again.

I don't know if its me still getting used to cooking on an electric stove or if I'm just really crappy at making any type of pasta, but for some reason about half of the time that I make it, I either have the water boil over or it comes precariously close to boiling over.

Monday is $4.88 cooked rotisserie chickens, Wednesdays are $1.69 small packs of boneless, skinless chicken breasts, Thursdays are $1.88 small packs of 80/20 ground beef, and Fridays are $7.98 for 2 lb. bags of medium sized shrimp. Talk about an easy way to stock up the freezer!

I realized this week that we are spending A LOT of money on groceries, close to $500 a month for 3 people. That's kinda crazy considering I used to spend $240 for my mom and I. I can't imagine adding 1 person costing that much extra money. So I decided I'm going to start cutting down on what we buy and not always stocking the pantry until we actually run out of something. As long as the world doesn't end in 2012, I'm pretty sure I won't need to add to the 6 cans of green beans. =)

Welcome (part 2)


Hi there! Hopefully with the name change you were able to find me. As I said on my old blog, the name was just the first thing that I could think of when creating a blog and it sure wasn't original or even mildly exciting.

When I found that people were actually reading this (and that I had decent recipes to contribute) I figured it was a good time for a name change. The old website still exists and provides a post linking you here but all of the recipes have been imported over.

Yesterday Tom and I went to register for wedding items, which I'll be blogging about on my wedding blog, and stopped into the mall after we were done. We went into a store called Kirklands and I found tons and tons of cute stuff. I can't post much of what I bought because they are bridesmaids gifts and I have no idea if my bridesmaids might lurk over here one day. But I did get this:
Cute apron, huh? It was a very tough choice between this one and one that was black and white damask with a hot pink trim and had a monogram N on it. Very tempting, but I thought this one was cuter. And the best part, only $15!

Mushroom Mac & Cheese


When I saw this recipe on Annie's Eats I knew that I wanted to try it, but that I would never be able to make the exact recipe. Even though Redner's is great for carrying the non-standard ingredients that I need, they don't always have what I need on the week that I need it. Example: Gruyere cheese. The recipe calls for shredded Gruyere. That would be like finding a winning lottery ticket 5 minutes before the drawing. I also knew that I wouldn't be able to find all of the fresh herbs that the recipe called for either.

So I decided to make do with what I could find and see how it turned out.

Mushroom Mac and Cheese

Servings:  6-8

    • 3/4 box elbow macaroni
    • 6 tbsp. unsalted butter, divided
    • 1 lb. mushrooms, roughly chopped (baby bella/cremini)
    • 1/2 small onion, diced 
    • 2 tbsp. minced garlic
    • 1 tbsp. white wine
    • 3 tbsp.  all purpose flour
    • 1 tsp. basil
    • 1 tsp. rosemary
    • 1 tsp. thyme
    • 1/2 tsp. paprika
    • 2 cups milk (I used 2%)
    • 6 oz. Swiss cheese, shredded
    • 6 oz. cheddar cheese, shredded
    • 1/2 cup panko breadcrumbs
    • 1 tbsp. bacon bits (optional)
    • salt and pepper to taste

1. Grease a 9x13 baking dish. Bring a large pot of salted water to a boil and cook the pasta according to directions for al dente. Drain the pasta and set it to the side.
2. Melt 2 tbs. of butter into a medium sized skillet over medium heat. Add the chopped mushrooms and onion and cook until the mushrooms are tender, about 6 minutes. Add the garlic and cook 1 minute more or until almost all of the liquid has evaporated from the pan.
3. Remove from heat and add in the white wine. Set to the side. Preheat the oven to 350.
4. In a medium saucepan, melt 3 tbs. of butter over medium high heat. Whisk in the flour to form a paste. Cook for 1 minute, stirring constantly until the mixture is golden. Stir in the herbs and cook for a few more seconds. Whisk in the milk and cook until until the sauce begins to thicken and simmers. Remove from the heat and add in the cheeses. Whisk until completely smooth.
5. Add the mushroom mixture into the cheeses and stir until combined. I found it easier to add the noodles into the pot and stir until they were coated with the cheese. Pour into the greased baking dish.
6. Melt the last tbsp. of butter (I used the microwave to save another dish) and add the panko breadcrumbs to it. Toss until coated. Sprinkle the breadcrumbs over the pasta.
7. Put the baking dish in the oven and bake for 20 minutes or until the cheese is browned. Let sit up to 15 minutes before serving.

Jamie Oliver's Food Revolution


On a Friday night about three weeks ago I was flipping through the tv channels trying to find something to watch. I stopped on a show where a man was talking to cooks in a school cafeteria. The first words I heard were not pleasant. The cook told the man that they didn't have the time to serve healthier options to the kids. I was instantly hooked.

A few minutes later I realized the man was Jamie Oliver and the show was called Food Revolution. Jamie was in Huntington WV, one of the unhealthiest places in the entire US, and he was trying to change the way that the children ate at school.

When Jamie held up different vegetables and none of those children could identify them, I was shocked, disgusted and saddened all at the same time. What are we teaching and feeding these children if they have absolutely NO IDEA that ketchup comes from tomatoes and french fries from potatoes? How is that even possible?

I remember being a kid and constantly asking what was on my plate and where it came from. Hell, I remember the first time my dad ordered Beef Chow Mein from the local Chinese place and asked me if I wanted some. I made him tell me what each individual piece in the dish was before I would taste it. Isn't this just common curiosity? Since when did children stop being curious?

Listening to the "cook" at the elementary school infuriated me. Never have I wanted to climb through a television screen and smack that attitude right off her face. When that woman said that she did her job just for the money and that they basically didn't care what they were feeding those kids, I almost had to change the channel. Sure lady, lets just kill the youth of America because you are too lazy and stupid to give a shit!

Since that first episode I've become addicted to this show. Earlier today, while blog hopping around I saw that someone had a Food Revolution badge in their blog. I immediately clicked on it and added it to my blog. I also signed the petition. And now I want you to as well.

Consider it your good deed for the day/week/whatever. The numbers on that map need to go up. Especially you people out there in Wyoming. We need to care about what kids are eating in schools. How can America have a future if we're setting all of these children up for diabetes, obesity and other health problems? Think about it in basic terms - the food these kids eat is killing them. Slowly, but it is killing them. Do you really want to let that happen?

I got smart today and asked on the What's Cooking board of TheNest how they make printer friendly posts. In case anyone reading wants to use this (or in case I forget how to do it) I'm going to post the directions.

1. Click on Create New in Google Docs and select Document.
2. Copy and paste or type in the information you want to be printable. (Is that a word?)
3. Click on Share in the upper right corner and select Get the Link to Share.
4. Check off Allow Anyone with the link to view.
5. Copy the link.
6. Save & Close.
7. In your blog click on Link.
8. In Text to Display type Print Friendly
9. In Web Address paste the link to the Google Doc.
10. Click on Test this Link to make sure it works.

Shrimp Scampi


I'm not sure how I feel about the Print This Page button at the bottom of this post. When I tried it at work, it only printed half of the page. I'm not sure what purpose that serves. So I'm going to leave it on there for the time being, but I want to find one that works better. 

I said I would be back with recipes this week and here I am. A few weeks ago Tom told me that he and C were tired of pork chops. Of course this was after I just bought another family pack of them, but that's another story. He said that they'd much rather have a pork tenderloin or to have some type of fish or seafood. I have no problems with seafood, I just don't have very many recipes to cook it. 

I guess its a Maryland thing. We steam crabs and shrimp. That's pretty much it. I honestly can say that aside from raw or steamed, I don't think I've had seafood any other way. Well...that's not true, I've had baked and broiled fish, but not very often. 

I found this recipe on Annie's Eats and thought it was simple enough that I would probably like it. Actually, the directions were so easy to follow that Tom made everything while I stood there and supervised. If I would have thought about it, it would have been this week's Cooking for Beginners Recipe.


Shrimp Scampi
Servings: 4

    • 1 lb. shrimp, peeled and deveined
    • 1/2 box fettuccine (or linguine)
    • 4 tbsp. butter
    • 2 tbsp. olive oil
    • 3 tsp. minced garlic
    • 3 tsp. parsley
    • 1/4 tsp. lemon zest
    • 1 tbsp. lemon juice
    • salt, pepper, and crushed red pepper to taste

1. Bring a medium to large pot of salted water to a boil. Add the pasta and cook according to the directions.
2. Add butter and olive oil to a skillet and heat over medium-high heat.   
3. Add the garlic to the butter and olive oil and cook for about a minute. 
4. Put the shrimp in the skillet, in an even layer and season with salt, pepper and crushed red pepper flakes. Cook the shrimp until lightly pink on one side. 
5. Toss the shrimp to cook the other side. They will take about 2 minutes per side depending on how hot you have the heat. 
6. Remove the shrimp from the heat and add in the parsley, lemon juice and lemon zest. We added more salt, pepper and red pepper flakes at this point too.
7. When the pasta is done cooking, drain the water and add the noodles to the shrimp mixture. Toss/stir until well combined. 
8. Serve immediately and enjoy!

I ended up liking this more than I thought I would but next time I'm going to up the amount of lemon juice and red pepper flakes. I didn't taste very much seasoning or acidity and I think it would really make a difference in the dish. I tend to go light on anything that says lemon because I had a horrible Rachael Ray recipe experience where everything tasted like an lemon slice that sat in liquid too long. It was disgusting!! Next time I want to serve this with a green salad (that only I will eat) and some crusty bread broiled with a bit of olive oil and Italian seasonings.

I've been a bad blogger


Since I added the Foodie Blogroll Widget I knew that there was a pretty good chance that my blog would get more traffic so I had all of these grand plans to update the blog more often and have awesome and cool recipes and yadda yadda.

As you can see, that didn't happen. I'm kind of disappointed about Easter. I made fruit salsa, twice baked potato skins, cheesy jalapenos, a ham and black bottom cupcakes and in the busy-ness of the day I completely forgot to take pictures. Everything I made was even displayed on cool serveware!

When I realized that I forgot to take pictures I said 'ah screw it' I'll just blog a dinner this week....until I realized that this week was clean out the pantry week. Last week Tom pulled some random things out of the pantry and told me I had to use them this week. What were they?
  • 1/2 box pancake mix
  • 3 boxes Kraft mac & cheese
  • Uncle Ben's Oriental Fried Rice
  • Uncle Ben's Mexican Fiesta Rice
  • 2 cans of tuna fish
  • a box of Barilla rigatoni pasta
Tom said he wants hot dogs and mac and cheese. Not together, like most people picture it, but he honestly wanted hot dogs on buns with a side of mac and cheese. I was supposed to cook this on Monday but when I got home Tom said he wasn't hungry (I later found a McDonalds bag in the trash!) so I didn't cook. Tuesday Tom told me the same thing (I didn't see any fast food wrappers though) so I didn't cook then either.Wednesday rolled around and since I pulled out a flank steak for the recipe on the back of the Mexican Fiesta Rice, I decided I was cooking come hell or high water. I was lazy and followed the recipe on the back of the box exactly. It was good, but not blog-worthy. Yesterday I tried to get creative and it completely failed. I attempted to make Italian Chicken over pasta with vegetables.

I marinated the chicken, cooked the pasta and sauteed the broccoli, red pepper and mushrooms in chicken stock but it was just gross. Tonight I'm making pancakes and bacon which isn't blog worthy either. I could add blueberries to the pancakes but considering its a box mix, I'm really not doing anything special.

I promise that next week I will be back with another Weekly Meal Breakdown and at least one recipe that is worth blogging. Don't believe me, internet? Well then I internet-pinkie-promise you. | <-- see, that's me holding up my internet-pinkie-finger.

Anyway, I hopped on here today because I wanted to find add one of those cool 'Print' buttons (I still haven't found one I like) and that's when I found all of the comments and followers.  My eyes got all big and I thought 'Holy crap I have people reading my blog and I haven't been here all week. That's horrible!.' So, here I am. Making excuses to you. =( Forgive me?

In other news, tomorrow is my 25th birthday. I'm not sure how I feel about that. In some ways I can't believe I'm 25 already and in others I feel like I haven't really aged after turning 21. Aside from cheaper car insurance there really isn't much to look forward to age-wise after turning 21. Think about it; at 16 you can get your license, 18 you're an adult and 21 you can drink. 25 is like "Woo hoo! I can rent a rental car, have cheaper car insurance, say that I'm a quarter of a century and prepare for turning 30!". Yeah - it didn't sound that exciting to me either.

So I'm kind of apathetic about turning 25. Its just another day to me. Which brings me to my plans. After a horrendous hair cut a few weeks ago by a new stylist, I am waking up early in the morning hours to travel 1 hour and 15 minutes or so to my old stylist who can hopefully salvage my head and make me look normal. Then I need to drive home, get a pedicure, spend some time with Tom and get ready to go out with some friends at the bar around 7 or 8.

On Sunday Tom and I are going to do something together but I have no idea what. He won't tell me. I get impatient when I know there is a surprise coming. Maybe I can convince him to tell me tonight. Now since I'm trying to eat healthier this is my internet birthday present to myself:

I got the email approval today that I was added to the foodie blogroll. YAY!

I know its not a gigantic deal, you just have to have a blog older than a month with 80% about cooking, but I think its pretty neat. Tom said he wants to start presenting my meals better for the pictures. =)

I thought about skipping a cooking for beginners recipe this week because its been a stressful and annoying week, but I think I'll blog tonight's dinner, spicy chicken pizza.
