Weekly Meal Breakdown #19


Sheesh. I suck at blogging lately. I don't even know how long I didn't have my cupcake background anymore because it was discontinued from the website. There aren't a lot of cute food backgrounds out there and I just don't have the money to have one made right now, so you'll all have to be subjected to this standard Blogger one until I find something better.

I think about blogging. I take pictures of meals. But the actual act of posting the recipe and picture is just too much lately. I'm blaming it on the wedding being 49 days away. 49 DAYS!!! I can't even believe it. My to-do list is still pretty large and my to-pay list is much more depressing than usual. But the good news about the wedding being 49 days away is that the honeymoon is 51 days away. I can't wait to plop myself down on the beach or at the pool and just lay there. No plans, no to-do list. Just me and the sunshine. And some much needed relaxation!

Although, it won't last for long. My boss has offered to pay for me to take two Quickbooks classes that the local community college offers. We get back from the honeymoon on 9/27 and the classes start on 10/8. At least they are only on Monday nights. I don't think I could handle much more than that.

So, with the wedding being so close and so much money being owed now, I've cut our grocery budget by a minimum of $20 per week. If I'm lucky, it will be closer to $30 or $40 per week, but we'll see. There's going to be a lot of basic meals coming up...grilled cheese, tacos, spaghetti, lasagna, soups, stews, basically anything that can be made cheaply. If you have fancy taste buds, well, maybe you should look at some of my older recipes! =)

Sunday - seared sesame ahi tuna steaks with teriyaki mashed potatoes and corn on the cob
3 ahi tuna steaks $6

Monday - mushroom mac and cheese
mushrooms $2
white cheddar cheese $2
elbow macaroni noodles $1
Total: $5

Tuesday - teriyaki chicken and broccoli with broiled pineapple over rice
3 chicken breasts $2.64
broccoli $0.89
pineapple $.75
boil-in-a-bag rice $0.66
Total: $4.94

Wednesday - homemade dirty rice
boil-in-a-bag rice $0.66
green pepper $0.98
kidney beans $0.75
diced tomatoes $0.75
1 lb. ground beef $2.09
Total: $5.23

Thursday - cheddar, green pepper and mushroom omelets
6 eggs $0.66
cheddar cheese $1.25
(remaining mushrooms and green pepper from other meals this week)
Total: $1.91

Friday - homemade pizza
Pilsbury Hot Roll Mix $1.39
pizza sauce $1
mozzarella cheese $2
Total: $4.39

The total for this week is $25.15. Wow, that's really impressive. I wonder how long I can keep making really cheap meals without getting bored of not cooking anything interesting or getting tired of eating the same old stuff. 8 weeks is my goal. We'll see what happens!
