Weekly Menu 9/2 - 9/6

Labor Day weekend. What I consider the official end to summer. I'm sad. Summer is absolutely my favorite season. Even with the oppressive humidity that makes you want to shower every 10 minutes. Even with the pollen and various other allergies wreaking havoc on my sinuses. Summer is flip flops, iced coffees, sundresses, ice cream cones, grilling out, the sun on your face and trips to the beach. Nothing, absolutely nothing, outweighs summer.

I feel like this every year around this time. I think back on what I did for the past three months and always end up wishing we did more. But this year, I'm pretty okay with how summer turned out. We didn't get to the beach as much as I would have liked, but the trips we had were better than usual. I made it my goal to spend as much time as possible in the sun and my usually translucent but freckled skin has some semblance of a tan. Sure, I'd take another month of weekends I can spend outside getting sun or at the beach, but it would only leave me wanting more.

Mother nature and I need to get on the same page though. I plan on spending as much time as humanly possible outside this weekend. The only day that actually looks nice so far is Saturday. Not cool, Mother Nature, not cool at all. Even though I've kind of made my weekend busier than I should, I plan on making some extra recipes over this three day weekend. Not like I need them. I don't want to tell you how far in advance I have posts scheduled. But I'm sure it will come in handy at some point.

Sunday - Chicken and Roasted Red Pepper Sandwiches on Homemade Focaccia Bread with Roasted Potatoes 

Monday - California Crab Burgers with Old Bay Fries and Coleslaw

Tuesday - Taco Pizza with Guacamole Sauce

Wednesday - Shrimp and Parsley Rotini (no, I still haven't made this yet)

Thursday - Breakfast for Dinner (I haven't decided on what yet)

I have an idea for a creative BLT sandwich for lunches next week and also something new for breakfast. I also need to get back to my 28 by 28 list as its only about 8 months away and I have quite a few things to still cross off my list. I'm figuring the majority will be made over the winter since I rarely want to leave my house when its 20 degrees and windy outside.
