Weekly Menu 4/27 - 5/1


If you've recently read the menus for the past few weeks, you'll notice I have a lot of repeats on here. These are recipes that just got bumped off the plan for one reason or another but that I definitely wanted to make.

The soup is to get rid of the leftover ham bone from Easter. I am not really a fan of Easter so close to May because I feel like a lot of the recipes to use up ham are very wintery recipes. So I'm ignoring the fact that it's 69 and sunny and making soup anyway.

Sunday - ham and bean soup 

Monday - tater totchos

Tuesday - coconut chicken, parsnip fries and roasted green beans 

Wednesday - breakfast risotto

Thursday - chipotle beef tacos with pineapple salsa 

For breakfast I'm having a blueberry baked oatmeal because I picked up way too many blueberries last week. I'm trying something different for lunch and eating something I'd typically have for dinner, chipotle chicken, parmesan rice and roasted asparagus. We'll see how this works out.

I have high ambitions for today. I plan on blogging for the week, making my breakfast and lunch, cleaning out the inside of my car, doing work that I brought home with me and getting this poor blog updated. I realized the recipe index and the about me page are severely lacking so that really needs to happen. I'm curious to see just how much of it I can get done before I fall over in an exhausted heap. :)
