Weekly Menu 1/4 - 1/8


How is 2015 treating you so far? I haven't had any complaints although I am quite ready for vacation in February for a much needed mental break.

If you haven't looked around a bit on here, you should go check out the Recipe List. I confess to not updating it in quite some time and I made myself a goal back in December that I would have a revised recipe list on here by the new year. I ended up finishing it on New Year's Day so I can even scratch that off my goals list! I changed the layout to be alphabetical, figuring that might be easier to follow. I hope so! There will also be some other small changes coming in the future to the Recipe Index and names of the pages, but nothing crazy.

Sunday: BBQ Spare Ribs in the crock pot, baked beans, salad

Monday: Chicken Parmesan meatballs, garlic bread, salad

Tuesday: Steak, baked potato, salad

Wednesday: out to dinner

Thursday: Cranberry Jalapeno Burgers, fries, salad

For breakfast this week I'm having cream cheese roll ups and lunch will be a macaroni and cheese made with fontina cheese with mushrooms and prosciutto added in.

I know that's a lot of salad in one week but I haven't made salads in so long, I really, really want salad.

Now if I could just buy all of the ingredients...

Friday night I went to the grocery store and picked up baby carrots, cherry tomatoes, a cucumber and croutons. Later than evening I was looking in fridge for something to eat and thought a salad would be a great idea, except you kind of need lettuce for that. Pretty important thing to forget.

So Saturday I had to run back to the store and I picked up plastic wrap and dishwasher tablets and baby bell peppers to slice up and put in the salad and I got home and placed it all in the fridge and the cherry tomatoes caught my eye and I realized once again I had forgotten the lettuce. Seriously?!

I'm going back out again today and if I don't remember the lettuce this time, I give up. Wish me luck!
