Weekly Menu 11/1 - 11/6

I don't know why I didn't think of this before, but I've decided to have multiple little Thanksgivings for dinner this month in order to try out new recipes to share with you for the holidays. My menu is already planned and I've already increased the guest list by 5 people, so it might end up like a few years ago where I had 20+ people in my apartment. Like then, I'm totally fine with it.

The menu this week isn't just fall flavors, it's typically healthier recipes as well. I figure if there's going to be a day this month known for doubling or even tripling your usual calorie consumption, you might as well prepare for it in advance by lightening up the other meals you'll have leading up to it.

Sunday: orange-rosemary roasted turkey with Chinese-five spice carrots and spiced pecan green beans 

Monday: apple stuffed chicken breast with creamed spinach and mushrooms 

Tuesday: roast turkey pho

Wednesday: pork tenderloin with butternut squash, apples and cranberries 

Thursday: steak, baked potatoes and green beans 

For lunch this week I'm having an apple oatmeal made in the crock pot and lunch will be a caprese spaghetti squash. Spagheti squash has become my new favorite thing so I hope to share a lot of recipes including it with you in the future.
