Onion Rings

Including the onion rings in dinner tonight was accidental. Last week we had pulled pork sandwiches and we were supposed to have onion rings with them, but Tom didn't wake up from his nap until I walked in the door and I had my class that night. So the nicely sliced onion rings hung out in the fridge until today.

I looked through all of the recipes on allrecipes.com before I finally decided on this one. It still seemed like something was missing, but not having made onion rings before, I wasn't sure. I think they turned out pretty well, but I don't know how to get the coating to stick to them evenly.

Onion Rings

Servings: 15-20 rings

    • 1 large vidalia onion, cut into rings
    • 1 1/2 cups all purpose flour
    • 1 tsp. salt
    • 1 tsp. pepper
    • 3 egg whites
    • 1/2 cup milk
    • 1 tsp. vinegar
    • oil for frying

1. In a medium sized bowl combine the flour, salt and pepper. Stir to combine. In another bowl, combine the egg whites, milk and vinegar.
2. Dip each onion ring in the wet mixture then the dry mixture. Repeat so each onion ring is coated twice.
3. In a large skillet, add just enough oil to cover the bottom. Add the onion rings in batches, cooking about 2 minutes on each side or until golden brown.
4. Transfer to a paper towel lined plate to let dry. Serve immediately.
