Weekly Menu 12/8 - 12/12


You guys. I may have had a bit of a freak out on Thursday. It was a typical day and I had remembered that I hadn't went through my blog reader recently and there were probably tons of recipes there waiting for me to pin.

And then, two blogs in, it hit me in a rush. It was December 5th. Christmas was in TWENTY DAYS! Twenty days and I had not made a single cookie! I'm participating in a cookie swap for sugar's sake! And no cookies!!

In the non-blogging world, this really isn't a big deal. I'd have 3 full weekends before Christmas to make cookies. However, the whole reason why I wanted to make cookies and other various holiday treats is to share them with you. Which needs to happen BEFORE the holiday. I already had a post scheduled for Friday, which really meant I had only 12 blogging days to share recipes. Then this happened in my brain:

No wait, December 13th is the Recipe Swap and I already made a savory dish for that. 11 days. Uh oh. 

Oh and then the Improv Challenge is December 19th. But that's still a holiday treat. Whew! 

But the round up for the 12 Weeks of Christmas Treats is December 18th. Those ARE Christmas treats, but I still want to share new recipes. 10 days. Oh boy. 

Oh eff. I have holiday recipe round-ups planned for the week before Christmas. So like 8 days. How in the world am I going to make all of these Christmas treats and share them before Christmas is actually here?!?! 

I'm still trying to figure this out to be honest. Depending on how many successful recipes I manage to pull off and if I actually have the time to blog them, you might just see some Saturday posts from me so I can squish everything in before the holiday.

Oh, and in case you were wondering, I did make my first batch of cookies on Thursday. No time to dawdle! And since they're calling for a "wintry mix" here today, I am armed with eggs, flour, sugar, baking soda, baking powder, about 3,000 chocolate chips, a gazillion sprinkles and various other cookie making ingredients so I'm basically going to glue my feet to the kitchen floor and bake as many recipes as I can muster.

The menu for this week is going to be relatively simple so I can squeeze in as much baking time as possible. Given the weather, having soup for dinner tonight is only fitting.

Sunday - Mexican Corn and Poblano Soup 

Monday - Recipe Swap Meal 

Tuesday - Crock Pot Honey Sesame Chicken over rice with green beans 

Wednesday - Drunken Italian Noodles

Thursday - Pancakes and Bacon 

I haven't been hungry for breakfast lately so I'm not planning on anything specific, just to have a few easy to make things hanging around. I've been on a salad kick for lunch so I'll probably keep that up and hopefully remember to take a picture of it soon so I can share that with you.
