Irish Cake Mix Cookies

- 15.25 oz white cake mix box
- 2 large eggs
- ½ cup vegetable oil
- green food coloring
- sprinkles
Preheat the oven to 350 and line a baking sheet with parchment paper.
In a stand mixer combine cake mix, eggs and vegetable oil and mix until combined. Add in food coloring and sprinkles and mix until combined.
Use a cookie scoop to drop rounded spoonfuls of batter onto the prepared baking sheet, 2 inches apart. Decorate with additional sprinkles if desired.
Bake for 8-10 minutes or until just golden on the bottom.
Remove from the oven and let sit on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Store cake mix cookies in an airtight container on the counter for 4-5 days.
All food coloring is different. You may need to add a little or a lot to reach the desired color of green you are going for.
The batter will be sticky. If you prefer, you can refrigerate it for 30 minutes before baking to make it easier to handle.
If you don't have sprinkles, you can roll the dough in powdered sugar before baking and it will create a crinkle cookie.
