Ingredients

  • 1 lb pork tenderloin fat trimmed
  • 1.5 cups cranberry sauce
  • 1 tablespoon ginger paste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground ginger
  • 1 teaspoon celery seed
  • 1 teaspoon cinnamon
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ½ tsp pepper
  • ½ cup chicken stock or water

Instructions

  • Preheat the oven to 400 degrees. Spray a 9x13 baking dish with non-stick spray.
  • Combine the dry rub ingredients into a small bowl and coat the pork with them. Place into the prepared baking dish.
    1 lb pork tenderloin, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon chili powder, 1 teaspoon paprika, 1 teaspoon ground ginger, 1 teaspoon celery seed, 1 teaspoon cinnamon, ½ teaspoon cayenne pepper, ½ teaspoon salt, ½ teaspoon pepper
  • Stir ginger paste into cranberry sauce and spoon on top of the pork. Pour in chicken stock or water.

  • Bake pork for 35-40 minutes until it reaches 160 degrees in the thickest part. Let rest 5 minutes before slicing and serving. Top with additional cranberry sauce if desired.
