Buffalo Chicken Meatballs

Ingredients

  • 1 lb ground chicken
  • 1 large egg lightly beaten
  • ¼ cup Panko bread crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 tsp pepper
  • ½ cup Buffalo wing sauce

Instructions

  • Preheat the oven to 400 degrees. Line a baking sheet with foil, then place a wire rack on top and spray with non-stick .
  • In a large bowl, combine the ground chicken, bread crumbs, egg and spices. Form into golf-ball sized meatballs and place on the prepared baking sheet. You'll get 15-16 meatballs.
    1 lb ground chicken, 1 large egg, ¼ cup Panko bread crumbs, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon paprika, 1 teaspoon salt, 1 teaspoon pepper
  • Bake for 16-20 minutes until cooked through. Meanwhile, add buffalo sauce to a medium bowl.
    ½ cup Buffalo wing sauce
  • Once meatballs are cooked, toss them in the buffalo sauce. Serve with blue cheese dressing, celery sticks, baby carrots, etc.
