Add bourbon, apple cider, ginger simple syrup and lemon juice to a shaker glass.
2 oz. bourbon or whiskey, 2 oz. apple cider, 1 oz. ginger simple syrup*, 1 oz. lemon juice
Fill a glass with ice.

Shake bourbon mixture and pour over ice. Garnish with an thinly slice piece of apple if desired.
Ginger Simple Syrup:
Bring 1 cup of water to a boil. Remove from the heat and add Erysweet, stirring until it dissolves. Place the piece of ginger in a container with a lid. Pour the sweetened water on top, cover and let cool to room temperature. Refrigerate overnight. Discard ginger and use within 2 weeks.
1 cup water, 1 ¼ cups Erysweet*, 2 inch piece of ginger

*If you cannot buy Erysweet, replace with sugar or a sugar alternative. You'll want equal parts water and sweetener.
