Baltimore Bomb Pie

Baltimore's take on a classic chess pie, filled with our locally made Berger cookies and baked to perfection.

Ingredients

  • 1 refrigerated pie dough thawed
  • 15 oz Berger cookies approximately 8 cookies
  • 1 stick unsalted butter
  • 3 large eggs
  • ½ cup milk
  • ¼ cup sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornmeal (see notes for substitutions)

Instructions

  • Preheat the oven to 350 degrees. Roll out the refrigerated pie dough into a deep dish pie plate.

  • Heat butter in a small saucepan over medium heat until melted. Remove from the heat and let cool slightly.

  • Roughly chop 15 oz. package of Berger cookies, approximately 8 cookies in the package.

  • In a large bowl whisk together the eggs and sugar until combined. Then add in the milk, vinegar and vanilla.

  • Once the butter is cooled, whisk a little in to make sure it doesn't cook the eggs. Then whisk in the remainder of the butter along with the cornmeal.

  • Layer the chopped up cookies in the pie dough and pour the batter on top.
  • Bake for 1 hour or until the middle is just set. Remove from the oven and let cool completely before slicing and serving.
  • Optional: drizzle chocolate syrup on the pie once it's cooled before slicing.

Notes

Cornstarch creates a crust at the top of the pie. You can also use all purpose flour or almond flour, but it may not be as crispy. 
Berger cookies are made and sold in Maryland. To make your own, I'd suggest the recipe on King Arthur Flour.
