Korean BBQ Burgers

Korean BBQ Burgers are packed full of flavor from the sweet heat of the Korean BBQ sauce, the spicy mayonnaise and the pungent kimchi.

Ingredients

For the Burgers:

  • 1 ½ lbs 80/20 ground beef
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • ½ teaspoon black pepper

For the Korean BBQ Sauce:

  • ½ cup brown sugar
  • ½ cup reduced sodium soy sauce
  • 2 tablespoon rice wine vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon ground ginger
  • 1 tablespoon sesame oil
  • 1 tablespoon sambal oelek chili garlic sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon black pepper
  • 1 teaspoon honey

Other:

  • 1 cup mild or hot kimchi chopped
  • ½ cup spicy mayo
  • 1 ½ teaspoon sambal oelek
  • 5 burger buns
  • ¼ cup green onions diced

Instructions

For the Burgers:

  • Preheat a grill to medium high heat.
  • Combine the ground beef, soy sauce, garlic, ginger and pepper together in a large bowl.
  • Work the seasonings through the meat being careful not to overwork it.
  • Form into 5 patties.
  • Grill for 3-4 minutes on each side or until cooked through. Transfer to a plate.

For the Korean BBQ Sauce:

  • Add brown sugar through cornstarch together in a small saucepan.
  • Whisk to combine and heat over medium high heat.
  • Whisk occasionally, until mixture has thickened, about 5 minutes.
  • Remove from the heat and stir in the honey. *

Assembly:

  • Whisk together mayonnaise and sambal oelek. Spread on both sides of the burger buns.
  • Layer sliced cucumbers onto the bottom bun, followed by the burger patty.
  • Spread BBQ sauce on top of the burger.
  • Then add kimchi and diced green onions to the top of the burger.

Notes

  • If your BBQ sauce is too thick, thin it out with 1 tablespoon of water at a time, whisk until fully combined and the sauce begins to loosen.
