Ingredients
3bell peppersdiced
2roma tomatoesseeded and diced
1large seedless cucumberdiced
¼cupfresh parsleychopped
¼cupfresh mintchopped
¼cupolive oil
2tablespoonlemon juice
salt and pepperto taste
Instructions
Combine all of the diced veggies, parsley and mint together in a large bowl.
In a small bowl, whisk together the olive oil, lemon juice, salt and pepper.
Pour olive oil mixture over the veggies and toss to coat.
