Preheat the oven to 375 degrees. Spray an 8x8 baking dish with cooking spray.
Cut 4 of the biscuits into quarters and arrange into a layer in the baking dish.
Bake for 10-12 minutes or until lightly golden. Remove from the oven and set aside.
In a large skillet, add the ground sausage, sage, crushed red pepper and garlic powder. Cook, crumbling the sausage into small pieces until it's browned and cooked through. Discard fresh sage.
Sprinkle the flour on top of the ground sausage and stir in.
Stir sausage with one hand and pour in the milk with the other, mixing until combined. Over medium high heat, bring the mixture to a boil while stirring frequently. Reduce to a simmer and season to taste with salt and pepper.
Once the sausage gravy has thickened, about 3-4 minutes, pour it on top of the biscuits in the prepared baking dish.
Cut the remaining 4 biscuits into quarters and arrange on top of the sausage gravy. Brush over the tops of the biscuits with melted butter.
Bake for 15-18 minutes more or until biscuits are golden brown.
