Ingredients

  • 8 jumbo refrigerated biscuits
  • 1 lb ground breakfast sausage
  • 1 bunch fresh sage or 1 teaspoon ground sage
  • ½ teaspoon crushed red pepper
  • ½ teaspoon garlic powder
  • cup all purpose flour
  • 3 cups 2% milk
  • salt and pepper
  • 1 tablespoon butter melted

Instructions

  • Preheat the oven to 375 degrees. Spray an 8x8 baking dish with cooking spray.
  • Cut 4 of the biscuits into quarters and arrange into a layer in the baking dish.
  • Bake for 10-12 minutes or until lightly golden. Remove from the oven and set aside.
  • In a large skillet, add the ground sausage, sage, crushed red pepper and garlic powder. Cook, crumbling the sausage into small pieces until it's browned and cooked through. Discard fresh sage.
  • Sprinkle the flour on top of the ground sausage and stir in.
  • Stir sausage with one hand and pour in the milk with the other, mixing until combined. Over medium high heat, bring the mixture to a boil while stirring frequently. Reduce to a simmer and season to taste with salt and pepper.
  • Once the sausage gravy has thickened, about 3-4 minutes, pour it on top of the biscuits in the prepared baking dish.
  • Cut the remaining 4 biscuits into quarters and arrange on top of the sausage gravy. Brush over the tops of the biscuits with melted butter.
  • Bake for 15-18 minutes more or until biscuits are golden brown.

Notes

  • If you don't have fresh sage, use 1 teaspoon ground sage or poultry seasoning and stir into the sausage while it is cooking.
  • English muffins may be used as a replacement for biscuits.
  • If not baking into a casserole, sausage gravy may be served over hash browns or toast.
