Slow Cooker Pork and Sauerkraut

Ingredients

  • 2 lb pork tenderloin (See notes)
  • 16 oz sauerkraut
  • 1 medium apple peeled and thinly sliced
  • 1 large onion peeled and thinly sliced
  • ½ cup chicken stock
  • 2 tablespoon brown sugar
  • 1 teaspoon caraway seeds
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  • In a 6 quart or larger slow cooker, add the sauerkraut, apple and onion slices, chicken stock, brown sugar and caraway seed.

  • Heat a large skillet over medium high heat. Season the pork tenderloin with salt, pepper and paprika. Add the pork to the skillet and cook for 2-3 minutes on each side, until just browned.
    2 lb pork tenderloin, 1 teaspoon paprika, 1 teaspoon salt, 1 teaspoon pepper
  • Transfer the pork to the slow cooker, cover and cook on low for 6 hours. Shred the pork into the sauerkraut. (See notes)
  • Serve with mashed potatoes and green beans.

Notes

Note: if using a pork loin or pork roast, cook for 8 hours. Tenderloin is much leaner and will only need 6 hours or less to fully cook.
