Soy Cilantro Roasted Potatoes are potatoes marinated in soy sauce, roasted and then topped with fresh cilantro.

- 1.5 lbs baby potatoes
- 3 tablespoon soy sauce reduced sodium
- 1 tablespoon olive oil
- 1 tablespoon cilantro fresh, chopped
- salt and pepper to taste
Preheat the oven to 450 degrees. Line a baking sheet with foil and spray with nonstick.
Rinse and quarter the potatoes. Place them in a large bowl.
1.5 lbs baby potatoes
Pour the soy sauce on top of the potatoes and let them sit for 5-10 minutes. Then toss with olive oil.

Arrange the potatoes on the prepared baking sheet in a single layer. Bake for 35-40 minutes, until crispy.
Remove from the oven and sprinkle cilantro on top. Season to taste with salt and pepper.

Air Fryer: Preheat air fryer to 400 degrees. Follow steps 2 and 3 above. Add to air fryer and cook for 13-15 minutes, tossing the potatoes halfway through. Follow step 5 before serving.
