Apple Pie Monkeybread Minis

Apple Pie Monkey Bread Minis are a super easy to make dessert, using store-bought biscuits. They're studded with fresh apples, coated in cinnamon sugar and baked into the perfect portion size using a mini bundt pan.

Equipment

  • 1 mini bundt pan

Ingredients

  • 1 can refrigerated jumbo biscuits
  • 1 large apple
  • ½ cup granulated sugar
  • ½ tablespoon ground cinnamon
  • 1 teaspoon vanilla bean paste + 1 teaspoon water or 1 teaspoon vanilla extract
  • 5 tablespoon unsalted butter melted

Instructions

  • Preheat oven to 375 degrees. Spray a mini bundt pan with non-stick spray.
  • Combine sugar and cinnamon together in a medium bowl.
    ½ cup granulated sugar, ½ tablespoon ground cinnamon
  • Cut each biscuit into 12 pieces. Toss the biscuit pieces in the cinnamon sugar mixture, then transfer to a large bowl.

  • Add the vanilla bean paste plus water to the remaining cinnamon sugar and stir well.

  • Peel, core and dice the apple. Then toss in the cinnamon sugar mixture until coated.

  • Stir the apples into the biscuit mixture and then fill the mini bundt pan ⅔ of the way full. Pour 1 tablespoon of melted butter on top.

  • Bake for 25 minutes, then remove from the oven and let cool for 10 minutes.
  • Use a spoon or knife to carefully dislodge the monkeybread from the pan and turn out onto plates.

Notes

To make in a full sized Bundt pan, double the recipe and bake for 30-35 minutes, or until golden brown.
