Instructions
Chicken Parmesan Meatballs
Preheat the oven to 375 degrees. Line a large baking sheet with foil and place a wire cooling rack on top. Spray the rack with cooking spray and set aside.
In a large bowl, combine the meatball ingredients - ground chicken through salt and pepper. Form into 16 evenly sized meatballs, each about the size of a golf ball.
1 lb ground chicken, ½ cup Parmesan cheese, ½ cup Panko bread crumbs, 1 large egg, 1 teaspoon minced garlic, 1 teaspoon dried basil, 1 teaspoon dried parsley, 1 teaspoon onion powder, ½ teaspoon salt, ½ teaspoon pepper
Place the meatballs on the prepared baking rack and bake for 20 minutes, turning the meatballs over half way through the baking.
Sauce and Assembly
Spray an 8x8 baking dish with cooking spray. Pour the pasta sauce into the dish and spread into an even layer.
24 oz tomato basil pasta sauce
When meatballs are cooked, arrange meatballs in even rows in the pasta sauce. Sprinkle the mozzarella cheese on top.
1 cup mozzarella cheese
Bake for 15 minutes or until the cheese is melted and bubbly. Garnish with fresh basil or parsley, if desired.

Serve meatballs and sauce in a shallow bowl. Optionally, serve over pasta, spaghetti squash or with garlic bread, on a sub roll, etc.
Notes
One serving is 4 meatballs in sauce, topped with cheese.
