Ingredients

Cake

  • 1 ⅔ cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ¾ cup brown sugar
  • 2 large egg whites
  • 1 large egg
  • 4 oz unsweetened apple sauce
  • 15 oz pumpkin puree

Filling

  • 8 oz cream cheese softened
  • 1 large egg white
  • 1 tbsp sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350 degrees and spray a Bundt pan with baking spray.
  • In a large bowl whisk together the dry ingredients.
    1 ⅔ cup all purpose flour, 1 teaspoon baking soda, 1 teaspoon salt, 1 teaspoon ground cinnamon, 1 teaspoon ground ginger, ½ teaspoon ground nutmeg, ¾ cup brown sugar
  • In a medium bowl whisk together the wet ingredients.
    2 large egg whites, 1 large egg, 4 oz unsweetened apple sauce, 15 oz pumpkin puree
  • Add the wet ingredients to the dry and mix until no lumps of flour remain.
  • In a mixer, add the cream cheese filling ingredients and mix until combined.
    8 oz cream cheese, 1 large egg white, 1 tablespoon sugar, 1 teaspoon vanilla extract
  • Pour half of the pumpkin batter into the prepared Bundt pan and spread it into an even layer. Add half of the cream cheese as dollop on top and swirl with a knife.
  • Repeat with remaining pumpkin mixture and cream cheese, swirling on top.
  • Bake for 1 hour then let set for 10 minutes. Place a plate on top of the Bundt pan and flip it over, turning out the cake. Slice cake into pieces.

Notes

Alternate cooking instructions: spread half of pumpkin mixture into a large loaf pan. Top with cream cheese mixture and swirl. Add remaining pumpkin mixture on top. Bake as directed.
