Shredded Roast Beast
Combine the Italian seasoning, garlic powder, onion powder, salt and pepper together and spread over the roast.
2 tablespoon Italian seasoning, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon salt, 1 teaspoon pepper, 3 lbs beef roast
Heat olive oil in a large skillet over medium high heat. Add the roast and sear for 2-3 minutes on each side.
1 tablespoon olive oil
Meanwhile, combine the onion, beef broth, Worcestershire sauce and bay leaf in the slow cooker.
1 large onion, 1 cup beef broth, 2 tablespoon Worcestershire sauce, 1 medium bay leaf
Once roast is seared, transfer to the slow cooker and cook on low for 8-10 hours.
Once cooked, shred the beef and return to the slow cooker.
Gravy
Remove 1 ½ cups cooking liquid and add to a large saucepan. Add in 1 ½ cups of water and the gravy packet. (If you don't have enough cooking liquid, substitute with water to reach 3 cups total).
1 packet au jus gravy mix
Whisk in gravy packet and cook over medium heat until it comes to a boil, whisking frequently. Once it thickens slightly, remove from the heat.
Sandwiches
Heat oven to broil. Line a baking sheet with foil and slice open club rolls. Divide cheese slices onto the roast and broil for 2-3 minutes, until cheese has melted and the rolls are toasted.
8 club rolls, 8 slices onion cheese
Pile shredded beef on top of the toasted roll and garnish with sliced pepperoncini.
1 cup pepperoncini
Serve sandwiches immediately, with gravy divided into bowls for dipping.
