Spring Sugar Cookie Bars are made of a sugar cookie crust and topped with a sweet spring-colored buttercream frosting and tons of spring-like sprinkles!
Preheat your oven to 350 degrees. Line a 9x13 baking dish with parchment paper and spray with cooking spray. Set aside.
In a medium bowl, whisk together the flour, baking powder and salt.
In the bowl of your stand mixer, beat butter and sugar until light and fluffy, about 5 minutes. Add in the egg and vanilla and mix until combined.
Slowly add in the dry ingredients until a coarse crumb mixture forms.
Press the mixture into the prepared pan.
Bake for 20-25 minutes or until lightly golden. Cool completely on a wire rack.
For the Frosting:
Combine butter and cream cheese in the bowl of a stand mixer and beat on medium speed until combined. Add in the powdered sugar 1 cup at a time, until fully combined.
Add in the milk, vanilla and salt and mix until combined. Check the consistency of the frosting to make sure it's not too runny. If it is, add ½ cup more powdered sugar.
Add in a few drops of food coloring reach your desired color.
To Assemble:
Use the parchment to lift the sugar cookie base from the pan.
