Gingered Cranberry Pork Tenderloin is an easy oven-baked pork tenderloin coated with a dry rub and topped with prepared cranberry sauce before cooking.
Preheat the oven to 400 degrees. Spray a 9x13 baking dish with non-stick spray.
Combine the dry rub ingredients into a small bowl and coat the pork with them. Place into the prepared baking dish.
1 lb pork tenderloin, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon chili powder, 1 teaspoon paprika, 1 teaspoon ground ginger, 1 teaspoon celery seed, 1 teaspoon cinnamon, ½ teaspoon cayenne pepper, ½ teaspoon salt, ½ teaspoon pepper
Stir ginger paste into cranberry sauce and spoon on top of the pork. Pour in chicken stock or water.
1.5 cups cranberry sauce, 1 tablespoon ginger paste, ½ cup chicken stock
Bake pork for 35-40 minutes until it reaches 160 degrees in the thickest part. Let rest 5 minutes before slicing and serving. Top with additional cranberry sauce if desired.
