For the Soup
2tablespoonunsalted butter
1tablespoonolive oil
1cupcelerychopped
1cupcarrotschopped
1cuponionchopped
2cupturkeychopped
4cupschicken stock(or turkey stock)
1teaspoonpoultry seasoning
salt and pepperto taste
For the Dumplings
2cupsprepared stuffing
¼cupall purpose flour
1largeegg

Instructions
Add butter and olive oil to a stock pot over medium heat. Saute carrots, celery and onions for 5 minutes. Add seasonings to taste.
In a large bowl, combine stuffing, flour and egg and mix together. Form into dumplings the size of golf balls.
Add in stock and bring to a simmer, then add in turkey and dumplings and simmer for 5 minutes or until heated through.
Notes
You can skip the carrots/celery/onion or add in what you have on hand. Any prepared veggies should added in at the end (green beans, peas, etc.) for the last stage of simmering. Taste test your soup before adding seasonings, as the prepared foods you're adding may have enough and you can never make a salty dish less salty!
