Whoville Roast Beast Sandwiches are a Who and Grinch approved version of a French Dip sandwich. Seasoned, shredded beef is piled onto a club roll and served with a rich, beefy gravy.

Heat olive oil in a large skillet over medium high heat. Add the roast and sear for 2-3 minutes on each side.

Meanwhile, combine the onion, beef broth, Worcestershire sauce and bay leaf in the slow cooker.

Once roast is seared, transfer to the slow cooker and cook on low for 8-10 hours.
Once cooked, shred the beef and return to the slow cooker.
Gravy
Remove 1 ½ cups cooking liquid and add to a large saucepan. Add in 1 ½ cups of water and the gravy packet. (If you don't have enough cooking liquid, substitute with water to reach 3 cups total).

Whisk in gravy packet and cook over medium heat until it comes to a boil, whisking frequently. Once it thickens slightly, remove from the heat.
Sandwiches
Heat oven to broil. Line a baking sheet with foil and slice open club rolls. Divide cheese slices onto the roast and broil for 2-3 minutes, until cheese has melted and the rolls are toasted.
8 club rolls, 8 slices onion cheese
Pile shredded beef on top of the toasted roll and garnish with sliced pepperoncini.

Serve sandwiches immediately, with gravy divided into bowls for dipping.
