Hey there! For the first time in I don't even know how long, I didn't make a recipe for the Improv Cooking Challenge last month. I've had a million different things going on and making a recipe in time completely slipped my mind. Which isn't great when you're the one hosting the event, but that's what happened.
And then it almost happened again this month. With the holidays coming up and a bunch of things to do at work, I nearly forgot about making a recipe. There are probably a million different recipes that include bacon and onions, the ingredients for this month's challenge, but none of them were appealing to me.
I finally decided that I was going to keep it simple. I needed a side dish for dinner one Sunday night and knew that I had all of the ingredients on hand to make this simple but flavorful dish.
Recipe
Bacon and Onion Green Beans
Ingredients
- 5 slices bacon
- 1 small onion diced
- 1 clove garlic minced
- 1 package steam in a bag green beans
- salt and pepper to taste
Instructions
- Heat a skillet over medium high heat and place the slices of bacon inside.
- Cook for 3-4 minutes on each side or until crisp.
- Remove bacon to a paper towel lined plate.
- Steam green beans according to package directions, draining water.
- Remove excess bacon grease from the pan, leaving 1 tablespoon in the pan.
- Reduce the heat to medium low and add in the onion, cooking for 5-7 minutes or until softened.
- Add in the garlic and cook for 1 minute.
- Add the green beans to the skillet and toss to coat.
- Crumble the bacon and stir into the green bean mixture.
- Serve immediately.
Notes
While nothing fancy, these green beans pack in a ton of flavor from the bacon grease, garlic and onions. I served this along with oven roasted chicken breasts and old fashioned stuffing. We're totally in the Thanksgiving spirit here and I have a ton of recipes coming up this month that will be perfect for the holiday.
