Easy Sprinkle Christmas Cookies are super easy 6 ingredient cookies, made using cake mix! They're vanilla flavored, sweet and chewy and covered in Christmas sprinkles.

If you follow me on Instagram, I recently shared the large quantity of sprinkles I possess and how I managed to organize them. There is a bit of a sprinkle addiction going on here. At least I can say that I didn't buy them all though. Many of them came from blogging events. But I still have at least 40 different varieties of sprinkles currently hanging out in my pantry. Why am I talking about sprinkles? Because these Easy Christmas Sprinkle Cookies are COATED in sprinkles!
WHAT ARE EASY CHRISTMAS SPRINKLE COOKIES?
Some people know these cookies as gooey butter cookies, but I've always known them to be easy sprinkle cookies.
Regardless of what you call them, these cookies are incredibly easy to make, as they only have 6 ingredients! Boxed vanilla cake mix, unsalted butter, cream cheese, egg, vanilla, and of course, sprinkles! That's it!
WHAT KIND OF SPRINKLES CAN I USE?
Honestly, just about any kind is fine. I think smaller sprinkles work better as they stick to the dough and can coat it entirely, but feel free to use jimmy-sized sprinkles, round sprinkles, big sprinkles, confetti sprinkles...just about anything you want.
EASY CHRISTMAS SPRINKLE COOKIE INGREDIENTS
- 18.25 oz box vanilla cake mix
- 1 stick unsalted butter, softened
- 8 oz. cream cheese, softened
- 1 egg
- 1 teaspoon vanilla
- 1 cup sprinkles
EASY CHRISTMAS SPRINKLE COOKIE DIRECTIONS
- Preheat the oven to 350 degrees. Line two large baking sheets with parchment paper.
- Beat butter and cream cheese in the bowl of a stand mixer until fully combined.
- Add egg and vanilla and mix until incorporated.
- Mix in the cake mix.
- Roll out dough into 1-inch balls and cover in sprinkles.
- Bake 10-12 minutes, then let cool on the baking sheet for 5 minutes before transferring to a wire rack to continue cooling.

Easy Christmas Sprinkle Cookies #ChristmasCookies
Ingredients
- 18.25 oz box vanilla cake mix
- 1 stick unsalted butter softened
- 8 oz cream cheese softened
- 1 egg
- 1 teaspoon vanilla
- 1 cup sprinkles
Instructions
- Preheat the oven to 350 degrees and line two large baking sheets with parchment paper.
- Combine butter and cream cheese in the bowl of a stand mixer and beat on medium speed until light and fluffy, about 5 minutes.
- Add in the egg and vanilla and mix until fully incorporated.
- Slowly add in the vanilla cake mix until a dough forms.
- Fill a small bowl with the sprinkles.
- Roll out the dough into 1-inch balls and coat with the sprinkles.
- Place on the prepared baking sheet and bake for 10 minutes or until crackly and puffed up.
- Remove from the oven and allow to cool on the baking sheet for 5 minutes.
- Transfer to a wire rack to cool completely.

I can only find 15.25 oz cake mix. Did you mean 15.25 instead of 18.25? I'm going to try it. With what I have.

I know I can still find cake mix in both sizes so I’m questioning if I typo’d the number or not. If the batter is too sticky, I’d add 1/2 cup flour at a time to balance it out. Let me know so I can adjust the recipe!
