Who doesn't love a chocolate bundt cake? Bundt cakes are one of my favorite cakes to make because they're just so easy! Mix cake batter, pour into liberally sprayed pan, bake, flip over and boom! Cake!
Now how cute is this cake for Halloween? It's not very often you have a cake that looks back at you, right? I love the spooky candy eyes and the colorful frosting.
WHAT IS A BUNDT CAKE?
The difference between a cake and Bundt cake is really just the type of pan. A Bundt pan is a pan with either fluted or grooved sides and a tube in the center that leaves a hole in the center of the cake. Bundt cakes are easier to make than layer cakes because you don't even to worry about leveling out the batter or cutting an even layer off a flat cake in order to stack it.
HOW DO YOU DECORATE A BUNDT CAKE?
Many bundt cakes also skip frosting entirely and are simply sprinkled with powdered sugar after they come out of the oven.
If you are like me and lack in the cake decoration department, Bundt pans come in a variety of styles that can add design to your cake. The most common is the grooved sides, but there are also Bundt pans that allow the cake to look swirled, spiralized or like a fleur de lis.
However, if you want to add something more to your cake, there are still a ton of options. For this recipe I used the tube style icing from Wilton in two colors and just went back and forth across the cake to create a pattern. You could also whip up a vanilla glaze or chocolate glaze. Or perhaps a ganache is more your style.
DOES A BUNDT CAKE HAVE TO BE MADE FROM SCRATCH?
Absolutely NOT! You are more than welcome to make a bundt cake from scratch, and I have on many occasions, but adding ingredients to a boxed cake mix is more than acceptable. Because Bundt pans are larger, most holding 12 cups, you will need more than just a boxed cake mix and it's ingredients to fill the pan. Well, honestly, you don't need them, you'll just have a shorter cake.
EYE SEE YOU BUNDT CAKE INGREDIENTS:
- 15.25 oz box chocolate cake mix
- 4 eggs
- 1 cup sour cream (or plain Greek yogurt)
- ½ cup water
- 1 tablespoon vanilla extract
- 3.4 oz box instant chocolate pudding
- ½ cup canola oil (or vegetable oil)
- 1 cup mini chocolate chips (entirely optional)
HOW TO MAKE EYE SEE YOU BUNDT CAKE:
- Spray your Bundt pan liberally with baking spray. Preheat the oven to 350.
- Combine everything up to the oil in a mixer and mix until smooth. Fold in the chocolate chips by hand.
- Pour into the prepared bundt pan.
- Bake for 45-50 minutes. Remove from oven and let cool 10 minutes.
- Flip over onto plate.
- Decorate with icing and candy eyes.
HOW DO YOU STORE A BUNDT CAKE?
This bundt cake will keep for at least 3 days kept on the counter. You can either keep it under a high domed cake stand, or if you don't have one of those slice the cake and place it on its side in a container with a lid.
