Buffalo Chicken Meatballs are great for dinner or as a party appetizer. Celery sticks, baby carrots and blue cheese dressing are great to serve with these meatballs.

Many moons ago I decided to make a bunch of different meatballs when one of our friends was moving back home. I wanted to make a different type using each kind of ground meat and buffalo sounded the like perfect choice for ground chicken.
What are buffalo chicken meatballs?
Buffalo chicken meatballs have all of the same flavors in your standard buffalo chicken recipe but are made using ground chicken. These meatballs can be baked in the oven, air fried or cooked in the slow cooker.
Ingredients
- ground chicken
- Panko bread crumbs
- large egg
- garlic powder
- onion powder
- paprika
- salt and pepper
- buffalo sauce
Optional serving items: celery sticks, baby carrots, blue cheese dressing
Instructions
First, preheat the oven to 400 degrees. Line a large baking sheet with foil, then place a wire rack on top and spray with non-stick. Then lightly beat the egg in a small bowl.
Then combine the ingredients in a large bowl. Add the ground chicken, Panko, spices, and egg and mix until combined, being careful to not overwork the meat. Form into golf-ball sized meatballs and place on the prepared rack.
Next, bake the meatballs for 16-18 minutes until fully cooked through. Meanwhile, add the buffalo sauce to a medium bowl. Once meatballs are cooked, add meatballs in the bowl and toss to coat with the sauce.
Serve the meatballs with celery sticks, baby carrots and blue cheese dressing or serve on slider/sub rolls.
Alternate cooking methods for chicken meatballs
Air Fryer: Prepare the meatballs and preheat your air fryer to 400 degrees. Cook for 12-15 minutes, until meatballs are cooked through, then follow steps above for tossing in sauce.
Slow Cooker: Prepare meatballs as instructed above, but only bake for 5 minutes or until they're just firm enough to hold their shape. Then transfer to a greased slow cooker, add in the buffalo sauce and cook on low for 2 hours.
What to serve with buffalo chicken meatballs
Buffalo Chicken Meatballs can be served own their own as an appetizers. Blue cheese dressing is a great choice for a dipping sauce. Celery sticks and baby carrots would be great options as well. Or serve them on slider or sub rolls.

You need a binder to hold it all together - in this recipe I use a lightly beaten egg and Panko bread crumbs.
Overworking the meat will result in tough meatballs. Mix just long enough to incorporate the spices, egg and Panko.
Yes, while milk is not a binding ingredient, it does add moisture which is great for leaner ground meats like turkey and chicken. If you find your meatballs are falling apart when you add milk, add in a little more Panko or breadcrumbs.
Yes, uncooked meatballs can be flash frozen for 10 minutes on a sheet pan (just until firm) then transfered to an air-tight container and frozen for 3 months. Cooked meatballs (not tossed in sauce) should be cooled completely before being transfered to an air-tight container and frozen for 3 months.

- In a large bowl, combine the ground chicken, bread crumbs, egg and spices. Form into golf-ball sized meatballs and place on the prepared baking sheet. You'll get 15-16 meatballs.1 lb ground chicken, 1 large egg, ¼ cup Panko bread crumbs, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon paprika, 1 teaspoon salt, 1 teaspoon pepper
- Bake for 16-20 minutes until cooked through. Meanwhile, add buffalo sauce to a medium bowl.½ cup Buffalo wing sauce
- Once meatballs are cooked, toss them in the buffalo sauce. Serve with blue cheese dressing, celery sticks, baby carrots, etc.
