Kiwi Pineapple Dream Cocktail is the best tropical cocktail for summer. Made with coconut rum, pineapple juice and lemon juice then garnished with fresh pineapple and kiwi, you can’t help but think of summer when sipping on this sweet cocktail.

Pineapple is such a common fruit, but I feel like the kiwi fruit is underrated. I remember the first time I had one and giving the fuzzy brown fruit a really skeptical look as my mom sliced off the skin and cut it into pieces for me. I was expecting it to be bitter and crunchy from the seeds, but it was tropical and sweet.
July's ingredients for the Improv Cooking Challenge are kiwi and pineapple. My first thought was to make a salsa with these ingredients, but seeing as it's been just SO HOT outside, a cocktail seemed much more appropriate.

WHAT IS A KIWI FRUIT?
Kiwi fruit is an edible berry, covered in a thin brown skin with a light to medium green flesh and tiny rows of edible black seeds. While you would think the fruit originated in New Zealand, it actually comes from China who produces more than 50% of the world supply.
HOW TO KNOW IF YOUR KIWI OR PINEAPPLE IS RIPE?
Gently squeeze the kiwi fruit. If it has some give but not mushy, it is ripe enough to eat. If it is still hard, place in a paper bag to soften. Check daily as it will quickly become too ripe.
A ripe pineapple will have a golden hued skin. You can also sniff the bottom of the pineapple at the stem. If it smells like a pineapple, it’s ripe. If there is no smell, it’s not ripe enough.
HOW DO YOU CUT UP A WHOLE PINEAPPLE?
- First, get yourself a corer. They’re affordable and make your life so much easier. If you only plan to ever cut up one whole pineapple, you can skip this, but if you think there’s even a 50% chance that you’ll cut up another one, just buy the corer. You’ll thank yourself later.
- Then, cut off the green top of the pineapple. Slice ¼ to ½ inch down the side of each pineapple, removing the thick outer skin. Cut off the bottom as well.
- Press the corer through the center of the pineapple. (You’ll be able to see a slight ring shape, you want to follow that. Extract the core of the pineapple and flip it on it’s side.
- Slice into 1 inch thick rounds, then if you need pineapple chunks, cut each slice into 1 inch bite sized pieces.
KIWI PINEAPPLE DREAM COCKTAIL INGREDIENTS
- 1 kiwi, peeled and sliced
- 1 pineapple ring, sliced
- 2 oz. pineapple juice
- 2 oz. coconut rum
- 1 oz. lemon juice
KIWI PINEAPPLE DREAM DIRECTIONS
- Combine the pineapple juice, coconut rum and lemon juice into a shaker. Shake to combine and pour over ice.
- Add a few kiwi and pineapple slices to the drink.
- Garnish with kiwi and pineapple if desired.

- 2 oz. pineapple juice
- 2 oz. coconut rum
