Peanut butter and apple pair together so perfectly. Originally, I intended to just make apple blondies, but I was looking through my pantry and the peanut butter chips caught my eye. While a fully stocked pantry can be a blessing and a curse, it totally came in handy for this recipe as I was able to make a last minute addition. Which took these apple blondies from tasty to out of this world.
One of my coworkers actually came over to me and asked if I was going to be selling these at the arts fair I'm in next month. When I said I wasn't sure and he gave me an incredulous look and told me I better. Okay then!
WHAT ARE PEANUT BUTTER APPLE BLONDIES?
To me, a blondie to be the sister of a brownie. It's a sweet, baked dessert bar that is made with flour, brown sugar, butter, eggs, baking powder and vanilla. These blondies also include finely diced apples and peanut butter chips. Then a cinnamon sugar mixture is sprinkled on top before they are baked.
PEANUT BUTTER APPLE BLONDIE INGREDIENTS
- 1 ½ sticks butter, melted
- 1 ½ cups Bob's Red Mill Brown Sugar
- 1 cup sugar
- 3 eggs
- 1 tablespoon Taylor and Colledge Vanilla Bean Paste
- 1 teaspoon each cinnamon and salt
- 3 teaspoons baking powder
- 3 cups Bob's Red Mill Organic All Purpose Flour
- 3 Envy Apples, peeled, cored and diced
- 1 ½ cups peanut butter chips
- 1 tablespoon sugar + ½ teaspoon cinnamon

If you have an allergy to peanut butter or simply want to go another route, here are some other ideas:
- butterscotch chips
- caramel or salted caramel chips
- white chocolate chips

Peanut Butter Apple Blondies
Ingredients
- 1 ½ sticks unsalted butter melted
- 1 ½ cups Bob's Red Mill Brown Sugar
- 1 cup sugar
- 3 large eggs
- 1 tablespoon Taylor and Colledge Vanilla Bean Paste
- ¾ teaspoon cinnamon
- ¾ teaspoon salt
- 3 teaspoon baking powder
- 3 cups Bob's Red Mill Organic All Purpose Flour
- 3 Envy Apples peeled, cored and finely diced
- 1 cup peanut butter chips
- Topping: 1 tablespoon sugar + ½ teaspoon cinnamon
Instructions
- Preheat the oven to 350 degrees. Line a 9x13 baking dish with parchment paper.
- In the bowl of a stand mixer beat the butter with both sugars until combined, then add in the eggs, vanilla bean paste, cinnamon, salt and baking powder. Add in the flour.
- Add in the apples and peanut butter chips and mix until combined. Batter will be very thick!
- Spread the mixture into the prepared baking dish and smooth the top with a spatula.
- Combine the cinnamon and sugar together in a small bowl and sprinkle on top of the batter.
- Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
- Let cool completely before slicing and serving.
