Thai Turkey Burgers are juicy burgers full of Thai flavors! These burgers are topped with a spicy sriracha mayo and crunchy Asian coleslaw. Serve them without or without a bun!
I really love Thai food and it makes me really sad that we have so few Thai places around here where I can order authentic dishes. Most restaurants here serving Thai food are fusion restaurants and also serve sushi, Korean BBQ, hibachi or Chinese foods.
So of course, any chance that I get to make a recipe including Thai ingredients, I jump all over it. Turkey burgers are a great alternative to a beef burger and this Thai version is so full of flavor you'll wonder how turkey burgers have ever been called dry!
What is a thai turkey burger?
What makes these burgers "Thai" is the ingredients used. They're made of ground turkey, mixed with garlic, ginger, soy sauce, fish sauce, Thai red curry paste, and Panko breadcrumbs.
Then they're topped with an Asian slaw made of purple and green cabbage, carrots, soy, garlic, ginger, rice vinegar, sesame oil and sugar. Sriracha and mayonnaise are whisked together as a spread for this burger, but you could also used a peanut sauce.
How to make the burgers and slaw
Burgers: combine ground turkey, garlic, ginger, soy sauce, fish sauce, Thai red curry paste and Panko together in a medium bowl. Form into patties. and cook over medium high heat for 3-4 minutes on each side or until they reach 165 degrees.
Slaw: combine cabbages, carrots, soy, garlic, ginger, rice vinegar, sesame oil and sugar together in a medium bowl. Stir to combine and refrigerate until ready to use.
Other toppings for these burgers
- peanut or almond butter sauce
- pickled cucumbers, onions or radishes
- avocado slices
Tips for cooking turkey burgers
Ground turkey can be known for being dry. So how do you keep your turkey burgers moist?
- Don't overwork the meat. It will get tough and dry. Just handle until ingredients are mixed.
- Don't overcook them! Monitor the heat on the burgers while cooking. When it reaches 165, pull them off the heat.
How do you keep turkey burgers from falling apart?
You need a binder. The Panko in this mixture helps hold the burgers together. An egg can also be used to keep them together.

Thai Turkey Burger
Ingredients
For the Burgers:
- 1 lb ground turkey
- ⅓ cup Panko
- 1 teaspoon minced garlic
- 1 teaspoon ginger fresh or paste
- 1 teaspoon soy sauce
- 1 teaspoon Thai red curry paste
- ½ teaspoon fish sauce
- 5 hamburger buns
- ¼ cup lettuce
For the Asian Slaw:
- ½ cup green cabbage shredded
- ½ cup purple cabbage shredded
- ½ cup carrots cut into matchsticks
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 teaspoon minced garlic
- 1 teaspoon ginger paste or fresh
- 1 teaspoon rice vinegar
- 1 teaspoon sesame oil
For the Sriracha Mayo
- ½ cup mayonnaise
- 1 tablespoon Sriracha or more, to taste
Instructions
For the Burgers
- Preheat a grill or skillet over medium high heat.
- Combine all of the ingredients for the burgers into a large bowl and mix until blended. Form into 5 patties
- Grill (or pan-fry) patties for 3-4 minutes on each side or until they reach an internal temperature of 165 degrees F.
For the Asian Slaw
- Combine ingredients in a large bowl and toss to coat. Set aside until ready to use.
For the Sriracha Mayo
- In a small bowl whisk Sriracha into mayo until fully blended.
To Assemble
- Spread Sriracha mayo on both sides of each burger bun. Place lettuce on the bottom bun.
- Add the burger on top of the lettuce and top with a heaping pile of Asian slaw.
- Place the other half of the burger bun on top and enjoy!
