Cherry Limeade Filled Cupcakes are a cupcake take on the classic Cherry Limeade drink. Vanilla cupcakes are filled with lime curd and then topped with a cherry flavored buttercream frosting. A fresh cherry on top makes the perfect cupcake garnish.
This summer I have come to realize that I have a cupcake making problem. As in, I make way too many cupcakes. I'm sure this isn't really a bad thing, but they have become my go-to dessert for all of the cookouts and parties I attend. I was looking for a summery cupcake for the last cookout that we had and saw a recipe for Cherry Limeade Cupcakes and knew they were exactly what needed to be made.
The recipe I saw made the cupcakes from scratch, soaked them in a lime simple syrup and then used cooked fresh cherries down and added them to the buttercream. Which sounds delicious, but I don't have that kind of time before a cookout that I'm hosting. Okay, let's be real. I don't have that kind of time ever.
So, my Cherry Limeade Filled Cupcakes were made using a box mix, store bought lime curd and I flavored the frosting with gelatin. While not as delicious as the strawberry lemonade cupcakes I made earlier this year, these were still pretty delicious.
CHERRY LIMEADE FILLED CUPCAKE INGREDIENTS
- 15.25 oz. box vanilla cake mix + ingredients on the back
- 1 teaspoon vanilla extract
- zest of 1 lime
- 6 oz. lime curd
- 3 sticks unsalted butter
- 4 cups powdered sugar
- 2 tablespoon cherry gelatin (powder)
- 1-2 tablespoon milk
- 1 teaspoon salt
- fresh cherries, for garnish
CHERRY LIMEADE FILLED CUPCAKE DIRECTIONS
- In the bowl of a stand mixer, combine the cake mix and ingredients on back (eggs, water and oil) along with the vanilla and lime zest.
- Beat on medium speed until fully combined.
- Line 2 cupcake pans with paper liners and fill each halfway full.
- Bake for 18-20 minutes at 350.
- Let cool, then cut small circles out of the center of each cupcake.
- Fill with lime curd.
- Add butter to the bowl of a stand mixer and beat on medium speed until light and fluffy.
- Add in powdered sugar 1 cup at a time. Then add in cherry gelatin, milk and salt.
- Transfer to a piping bag fitted with a tip and pipe frosting onto cupcakes.
- Top with a fresh cherry.
CHERRY LIMEADE FILLED CUPCAKE SUBSTITUTIONS
- From scratch vanilla cupcakes
- Homemade lime curd or lemon curd if you can't find it
- 1-2 tablespoon cherry preserves or jam instead of the gelatin in the frosting
- Maraschino cherries on top instead of fresh cherries (the ones with the stem make for a better presentation)

Cherry Limeade Filled Cupcakes
Ingredients
For the Cupcakes:
- 15.25 oz. box vanilla cake mix + ingredients on the back
- 1 teaspoon vanilla extract
- zest of 1 lime
For the Filling:
- 6 oz. lime curd
For the Frosting:
- 3 sticks unsalted butter softened
- 4 cups powdered sugar
- 2 tablespoon cherry gelatin powder
- 1-2 tablespoon milk
- 1 teaspoon salt
- fresh cherries for garnish
Instructions
- Preheat the oven to 350 degrees. Line two cupcake pans with paper liners.
- Combine the cake mix and ingredients (eggs, oil, water), along with the vanilla and lime zest in the bowl of a stand mixer. Beat until fully combined.
- Divide the batter into the prepared cupcake pans, filling each about halfway full.
- Bake for 18-20 minutes or according to box directions.
- Remove from the oven and let cool completely.
- Use a paring knife to cut out circles in the center of the tops of the cupcakes.
- Fill each opening with the lime curd.
- Add the butter to the stand mixer with the blade attachment and beat on medium speed until light and fluffy.
- Add in the powdered sugar 1 cup at a time, followed by the cherry gelatin, milk, and salt. Mix until combined.
- Transfer the frosting into a piping bag with a tip and pipe the frosting onto the cupcake.
- Garnish with a fresh cherry.
