Blueberry Chicken Meatballs may sound odd, but it's a light and delicious take and flavor combination on a classic meatball. They're great for breakfast or brunch but when added to a sauce, can hold up as an appetizer at any party.

If you've read the title of this post or found the image on Pinterest, you're at least intrigued enough to know what in the world a Blueberry Chicken Meatball is. Now, I know it sounds odd, but since you're already here just hear me out okay?
I was searching for breakfast recipes and kept coming across recipes for homemade blueberry breakfast sausage. A little weird, but if you're eating a full American breakfast, it's not uncommon to have pancakes or french toast topped with fruit and a meat side - sausage or bacon most likely.
One of the most popular meatball appetizers are meatballs that have a grape jelly sauce. So blueberry chicken meatballs aren't that weird. Right?!
🥘 Ingredients for this recipe
- ground chicken
- fresh blueberries (see note in recipe card if using frozen)
- flour
- fresh mint and basil
- lemon juice and zest
- garlic powder
- salt and pepper
🔪Instructions for this recipe
- First, combine the ingredients. Mix ground chicken, flour, mint, basil, lemon juice, lemon zest, garlic powder, salt and pepper together in a large bowl. Gently fold in the blueberries.
- Then, form the meatballs. Form mixture into golf-ball sized meatballs.
- Finally, bake the meatballs. Bake at 425 on a lined baking sheet for 12-15 minutes.
Serving Suggestions and Substitutions
- Dip in blueberry jam, bbq sauce or a balsamic glaze.
- They're versatile enough to serve for breakfast, lunch or dinner.
- Breakfast: enjoy them along with pancakes, french toast or waffles.
- Lunch or dinner: serve with mashed potatoes, mashed sweet potatoes, a side salad or green veggies.
- Replace ground chicken with ground pork or turkey.
- Use dried basil and mint if that's what you have on hand.

Blueberry Chicken Meatballs
Ingredients
- 1 lb ground chicken
- ¼ cup all purpose flour
- 1 tablespoon basil chopped
- 1 tablespoon mint chopped
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ cup blueberries
Instructions
- Preheat oven to 425 degrees. Line a baking sheet with foil and place a cooling rack on top. Spray with non-stick spray.
- In a large bowl, combine ground chicken, flour, basil, mint, lemon juice and zest, garlic powder, salt and pepper. Gently fold the blueberries into the mixture.
- Form golf-ball sized meatballs making 16 total meatballs. Place on the prepared baking sheet.
- Bake 12-15 minutes or until the internal temperature reaches 165 F.

There seems to be an error in the recipe. At what point are the blueberries added to the meat mixture? They seem to be omitted from the instructions.

Oh jeez. I must have missed proofreading that section. I updated the recipe card. The blueberries are folded in right before the mixture is formed into meatballs.
