Happy April Fool's Day!

I debated on doing one of those "fool" posts like the meatball cupcakes with mashed potato "frosting" but in the end, I feel like its mean to tease people with food appearing as other food. Well, not my husband. If I could serve him vegetables that looked and tasted like cake, I'd totally do it, but that's another story.


Apple Crisp Muffins

Ingredients:
    • 1/2 cup whole wheat flour
    • 1/2 cup all-purpose flour
    • 1 tbsp. cinnamon
    • 1 tsp. baking soda
    • 1 tsp. baking powder
    • 1/4 tsp. salt
    • 1/2 stick unsalted butter, softened
    • 1/2 cup brown sugar
    • 1/2 cup sugar
    • 1 egg
    • 1 cup buttermilk
    • 2 apples, peeled and diced
for the crisp:
    • 1/4 cup brown sugar
    • 1/4 cup oats
    • 1/2 tsp. cinnamon
    • 1 tbsp. butter, melted
Directions:
1. Preheat oven to 375. Line a muffin pan with liners.
2. Whisk together flours, cinnamon, baking soda, baking powder and salt together in a large bowl.
3. In the bowl of your stand mixer beat butter and sugars together on medium speed until fully combined. Add in egg and buttermilk until combined. Slowly add flour mixture in until combined.
4. Stir in apples by hand. Divide mixture among muffin tins.
5. Prepare crisp by mixing together ingredients and dividing on top of the muffins.
6. Bake muffins for 18-20 minutes or until lightly golden. Remove from the oven and allow to cool completely on a wire rack.
